My kind of Dinner

I wish I was a super good cook and like loved it and made immaculate dinners with incredible sides and made everyone that walked in my house salivate because of the delicious spices swirling from the kitchen.. but sadly that is not me! Maybe one day! But right now, making dinner is SUCH a task around here.. with the twins nipping at my ankles like little puppies, and Knox right in the middle of whatever I am doing.. It can seem almost impossible! Anyone else feel that way? So here is our little trick to make things a tad easier.. We crockpot a bunch of chicken breasts at the beginning of the week and then use that meat to make dinner throughout the week. It’s honestly the only way we can survive! We Β make taco’s, enchiladas, chicken salads, sandwiches.. etc. And it is so easy because the main ingredient is already done. All you need to do is add the sides and Β WALA! Dinner is ready. We’ve been a fan of bbq chicken but lately our good friends made us some buffalo chicken and we are obsessed!

It’s not my time to be an incredible chef.. we are in survival mode around here and getting dinner on the table is a pure miracle! But the most important thing to me is being with the ones I love.. even if we’re not eating a 5 course meal!
